carnivore cake
Technically, this is a variation of a cheesecake but carnivore-friendly with a cake-like texture. Fair warning – this is addictive!
Ingredients
4 8oz blocks of cream cheese
4 eggs
1 lb sour cream
1 T vanilla extract (optional)
32 oz heavy whipping cream
cream of tartar
Instructions
- make sure all ingredients are at room temperature and preheat oven to 325F
- whip cream cheese on high for 3 mins until smooth
- add sour cream and vanilla exxtract and mix until combined
- add eggs one at a time to the mixture, beating together on low or mixing by hand until just combined (you do not want to over-mix!)
- bake at 325F for 1 hour in 4 well-buttered and parchment-lined 6 inch cake time, or until the center has set (mine took 1.5 hours at 5000ft altitude)
- allow cheesecakes to cool in oven as long as possible, preferably overnight, before placing them in the fridge for at least 30 minutes to cool
- whip 32 oz of heavy whipping cream and a pinch of cream of tartar with 1T vanilla extract
- release cakes from tins and layer with generous amounts of whipped cream
