no-carb hunter’s chicken
Hunter’s chicken is chicken wrapped in bacon, topped with brown sauce and cheese. Need I say more? Nope, thought not.
Ingredients
2 chicken breasts
4 rashers streaky bacon
100g / 4 oz cheddar
100mL / 1/2 c beef broth
1 T worcestershire
1 T ACV
garlic, onion, glycine & salt to taste
Instructions
For the BBQ sauce:
- in a small saucepan, bring beef broth, worcestershire, ACV, seasonings and salt to a low boil, whisking as needed til comnbined
- allow to simmer until thickened
- For the chicken:
- preheat oven to 180 C / 350 F fan
- wrap the chicken in bacon until covered
- cook on a baking try for 30 minutes or until chicken is cooked through
- pull the chicken from the oven, cover in BBQ sauce, top with cheese and return to the oven for 3-5 minutes, until cheese has melted
