beef stroganoff with no-carb noodles
Traditional stroganoff has more steps and ingredients. This is a simple version made with no-carb noodles.
Ingredients
6.75 oz / 190g ground beef
1 oz / 25g cream cheese
2 eggs
salt to taste
Instructions
- cook ground beef in pan over medium heat
- while the beef is cooking, beat eggs together
- pour eggs into frying pan, spreading thinly over the bottom of the pan (only cook 2 eggs at a time in a large frying pan, you want the batter to set as thinly as possible for flexible noodles)
- cook the thin egg crepe for 30 seconds – 1 minute per side
- once cooked, roll the egg crepe and slice into noodles
- once cooked, mix in cream cheese until melted, adding water as needed til saucy
- serve the beef over egg noodles
