carnivore beef and cheese enchiladas

Ingredients
2 lb chuck roast
A splash of apple cider vinegar
Salt to taste
1c Beef broth
1 t each of: cumin, garlic powder, oregano, and cayenne (optional)
½ c sour cream
½ c cream cheese
1 c Colby Jack cheese, shredded
Chives for garnish (optional)
Instructions
- Slow cook chuck on low 8-10hrs, shred finely
- Make sauce by reducing roast drippings with beef broth and splash of acv (add seasonings as desired)
- Mix the sour cream, cream cheese, and shredded cheese together
- Fill tortillas with beef and cheese mix, rolling tightly and packing tightly into butter greased 9×13 pan
- Top with remaining cheese mix mixed with sauce and sprinkle any remaining colby jack cheese on top
- Bake, covered with foil for 25-30 mins in 350F oven
- Remove foil and broil for 5 mins for extra toasty cheese topping
