carnivore biscuits

Ingredients
8 oz cream cheese
1 egg (separated)
4 oz sour cream
1/2c pork rinds
salt to taste
Instructions
- make sure all ingredients are at room temperature and preheat oven to 325F
- whip egg white to stiff peaks, set aside
- in a separate bowl, whip cream cheese on high for 3 mins until smooth
- add sour cream, pork rinds and egg yolk, beating together on low or mixing by hand until just combined (you do not want to over-mix!)
- gently fold egg white into cream cheese mixture
- bake at 325F for 35-40 minutes in a muffin tin lined with cupcake liners
- allow biscuits to cool in oven as long as possible – these should be served at room temperature
