carnivore sausage-stuffed ravioli

Ingredients
For noodles:
2 egg yolks
2 c mozzarella
For ravioli:
1lb italian sausage
1/2 c ricotta
2 oz parmesan
salt to taste
Instructions
For noodles:
- soften mozzarella in the microwave for 30 seconds
- let cool for a moment before mixing in egg yolks
- flatten noodles between two sheets of parchment paper using a rolling pin
- refrigerate overnight to “dry” noodles out
For ravioli:
- brown italian sausage in a frying pan over medium heat, drain excess fats
- mix with ricotta, parmesan, and salt to taste
- fill ravioli with mixture and seal edges with a fork
- heat ravioli in brown butter, beef broth, or alfredo sauce
