chicken gnocchi carbonara

Before carnivore, I had never tried carbonara. Now, it is my favorite carnivore-friendly pasta!

Ingredients

1 oz / 25g grated parmesan

1 oz / 25g grated romano

2 eggs and 1 egg yolk

3 slices of bacon or equal amount of panchetta

1 batch of carnivore gnocchi

chives (optional)

Instructions

  1. slice bacon into pieces and fry over medium heat in a pan until crispy
  2. mix eggs and grated cheeses together, set aside
  3. once bacon is crisp, fry boiled gnocchi until golden in residual bacon fat (no need to remove the bacon from the pan)
  4. pull the pan from heat and allow to cool slightly
  5. pour the cheese and egg slurry over the gnocchi, allow the residual heat to cook the sauce and use residual gnocchi cooking water as needed to create a silky sauce
