no-carb ice cream
I don’t think I could survive the carnivore diet without knowing that a healthy ice cream option is still on the table – here’s my fav recipe!

Ingredients
1/2 c milk
1/4 c heavy whipping cream
1 egg yolk
vanilla bean (optional)
Instructions
- slice open vanilla bean and steep in milk & cream until simmering
- beat egg yolk in separate, heat-safe container
- once simmering, remove the vanilla bean and scrape out seeds
- slowly add 1/2 hot cream mixture to egg while beating, then mix egg back into the rest of the hot cream
- sieve mixture into heat-safe tupperware and stir in the vanilla seeds
- chill in fridge at least 4 hours, preferably overnight
- place mixture in the freezer 30 minutes before churning
- churn according to ice cream churn instructions and freeze for at least an hour once finished before serving
