no-carb roast beef dinner
This meal is high-effort and high-reward, if you miss roast beef dinners on your no-carb diet, miss no more!
Ingredients
roast beef
4 eggs
1 t baking powder
paneer
joint juices
100mL / 1/2 c beef broth
salt to taste
Instructions
For the roast:
- preheat oven to 180 C / 350 F fan
- salt roast to taste, place in roasting tin, and cover with foil.
- for a medium roast, cook for 6 minutes per 100 g / 4 oz
- 10 minutes before the end of the cooking time, remove from the oven, baste in its own juices, recover with foil, and return to the oven
- once finished, allow roast to rest for 5 minutes before carving
For the yorkshire pudding:
- preheat oven to 180 C / 350 F fan
- if possible, “butter” a muffin tin with roast fat, if not, butter will do
- separate eggs, whip 2 egg whites to stiff peaks, gently fold 4 egg yolks and baking powder into the whites
- distribute evenly to heated muffin tin, filling each cup 3/4 of the way
For the gravy:
- in a small saucepan, bring beef broth and joint juices to a simmer
- allow to simmer until thickened to desired consistency
For the roast “fauxtatos”
- heat ghee or duck fat in a large frying pan over medium-high heat
- cube paneer into desired size
- fry paneer for 30 seconds – 1 minute on each side, or until perfectly golden brown
- remove from pan and salt, serving immediately
